Conteúdo: Background: Growing consumer demand for healthier food products has intensiﬁed the search for natural addi-tives. Due to its functional properties, ﬂaxseed mucilage has signiﬁcant commercial potential whenit comes to enhancing desirable characteristics in food formulations. Aim: This study evaluated the potential of ﬂaxseed mucilage as a natural thickening agent to replaceconventional thickeners in chocolate whey beverages. Methods: Mucilage was extracted from ﬂaxseeds using a water-based method, and its technological properties(solubility, water and oil absorption capacities) were characterised. Four chocolate whey beverageformulations were prepared: control beverage without thickener, beverage with carboxymethyl cellu-lose, beverage with ﬂaxseed mucilage and beverage with carboxymethyl cellulose and ﬂaxseedmucilage. Physicochemical parameters (pH, titratable acidity, moisture, ash, protein and fat) wereanalysed. Rheological behaviour was evaluated by rotational rheometry. Consistency, colour inten-sity and sensory acceptance (consumer testing using a 9-point hedonic scale) were also assessed.All experiments were conducted in triplicate. Data were analysed using the software R, withANOVA, Friedman’s test or Kruskal–Wallis test to identify signiﬁcant differences between samplemean values (P &lt; 0.05), followed by post hoc Nemenyi’s test for multiple comparisons. Major Findings: The addition of ﬂaxseed mucilage did not cause adverse changes to physicochemical parameters,but signiﬁcantly improved beverage consistency and colour intensity (P &lt; 0.05). Rheological proﬁleswere consistent with commercial standards, displaying pseudoplastic behaviour. Consumer testsdemonstrated high sensory acceptance. Industrial Implications: Flaxseed mucilage is a viable natural thickening agent for dairy beverages. Its industrial adoptioncould reduce reliance on synthetic additives while meeting clean-label consumer demands.</summary>

Conteúdo: This study evaluates the flow and filtration performance of different membrane types for clarifying coconut water. Although crossflow microfiltration is well established for fruit juices, its application to whole coconut water and the influence of membrane material on flow, fouling behavior, and retention of bioactive compounds remains poorly understood. Addressing this gap is critical for optimizing clarification processes while preserving nutritional and functional quality. Here, three membrane types (silicon carbide – SiC, aluminum oxide - Al2O3, and polypropylene - PP) are tested under identical operating conditions (ΔPTM, temperature, crossflow velocity, and membrane area) and are benchmarked for permeate flux, fouling propensity, and retention of key bioactive compounds. The results indicate that ceramic membranes deliver superior clarification performance, with SiC exhibiting the highest permeate flux (&gt;300 L h−1 m−2), surpassing PP and Al2O3 by ≈ 400% and ≈90%, respectively. The SiC system also shows the lowest specific energy consumption (0.48 ± 0.02 kWh m−3) and minimal alteration of coconut water's natural composition. In closed-loop mode, ceramic modules exhibit concentration polarization as the primary resistive contribution, whereas polypropylene is dominated by fouling and shows the highest irreversible resistance among the membranes. Chemometric analyses (NMR and ICP-OES) reveal that the SiC permeate maintains an organic and mineral composition closest to that of whole coconut water. Considering permeate flux, energy efficiency, and product quality together, SiC membranes represent a technically and economically viable option for potential industrial-scale clarification of coconut water.</summary>

Conteúdo: This study aimed to develop cassava thermoplastic starch (TPS) biopolymers and polymer bionanocomposites with varying concentrations of montmorillonite (MMT) nanoclay and coconut oil (CO) by extrusion. X-ray diffraction indicated intercalated and partially exfoliated structure of nanoclay lamellae in the TPS, forming a polymer bionanocomposite. Colorimetric analyses showed that the color of the materials changed with variations in MMT and CO concentrations. The water absorption test revealed synergism between MMT and CO in reducing the hydrophilic character of the polymer bionanocomposite. Scanning electron microscopy (SEM) showed heterogeneities in the fracture surface morphologies of the biopolymer with CO droplets, absent in the TPS/MMT bionanocomposite. MMT addition destroyed CO droplets, favoring rougher and more uniform surfaces. Mechanical behavior under tensile test showed that MMT and CO improved these properties. TPS/MMT/CO bionanocomposites produced with sustainable materials showed potential for application in the production of films for packaging perishable fruits, such as strawberries, where the effect of reducing senescence and increasing the shelf life of the fruit was observed.</summary>

Conteúdo: O desenvolvimento de tecnologias emergentes no setor agroalimentar exige ferramentas de avaliação que transcendam análises isoladas e determinísticas. Embora a literatura reporte abordagens combinadas de viabilidade econômica e impactos ambientais, persiste uma lacuna quanto à integração simultânea e harmonizada de métricas de circularidade material sob condições de incerteza, especialmente em níveis iniciais de maturação tecnológica (TRL 4-5). Este trabalho propõe, de forma inédita, o desenvolvimento e a validação do Framework TEEC (Técnico-Econômico, Ambiental e de Circularidade), uma ferramenta de inteligência decisória preditiva que unifica de maneira estocástica e multicritério a Análise Técnico-Econômica (TEA), a Avaliação do Ciclo de Vida (ACV) ex-ante e o Índice de Fluxo Linear (LFI). O diferencial metodológico reside na construção de consistência de inventário entre os fluxos de massa e energia e na blindagem contra volatilidades de mercado e de processo, por meio da integração da Simulação de Monte Carlo com o método Analytic Hierarchy Process (AHP). A validação do framework ocorreu por meio de dois estudos de caso aplicados ao setor agroalimentar. No primeiro estudo, avaliou-se a produção industrial de Fibra de Caju Desidratada (FCD) a partir do bagaço do caju. Após a modelagem de sensibilidade e escala (capacidade ideal de 6 toneladas/batelada), o método AHP apontou o Cenário 3 (secagem em estufa operada integralmente por matriz solar fotovoltaica) como a rota ótima. Em comparação com a rota de referência, o cenário promissor reduziu o Preço Mínimo de Venda (PMV) em 3,45% (de US$ 12,17 para US$ 11,75 kg⁻¹), mitigou as emissões de Mudanças Climáticas em 45,79% e diminuiu o Uso de Recursos Fósseis em 40,93%. No âmbito da circularidade, o Índice de Fluxo Linear (LFI) do cenário promissor permaneceu em 83,27%, apresentando 0% de melhoria (resultado idêntico ao da rota de referência). Essa estabilidade evidenciou uma importante constatação do modelo: estratégias focadas estritamente na descarbonização da matriz energética alteram as fontes de eletricidade e calor, mas não modificam a massa de materiais que flui linearmente no sistema. No segundo estudo de caso, avaliou-se a extração de Corante Vermelho-Púrpura a partir da pitaya em lotes de 1.000 kg/batelada. O método AHP selecionou o Cenário 2 (valorização e aproveitamento integral da polpa, cascas e mucilagem do fruto) como o de melhor desempenho global. Este cenário apresentou um ganho expressivo de eficiência material em relação à rota de referência, reduzindo o PMV em 47,03% (de US$ 84,86 para US$ 44,95 kg⁻¹). No âmbito ambiental, promoveu reduções consistentes entre 63% e 68% em todas as seis categorias de impacto avaliadas. Adicionalmente, as estratégias de eco- design focadas na massa reduziram o Índice de Fluxo Linear (LFI) de 97,36% para 83,61% no cenário ótimo, o que representa uma melhoria relativa de 14,12% no índice de circularidade em relação à referência. Os resultados globais indicam que os pontos fortes do framework TEEC consistem em: (a) prover previsibilidade financeira e ambiental integrada nas fases iniciais de PD&amp;I; (b) revelar trade-offs ocultos por análises isoladas, como o aumento substancial no uso de recursos minerais decorrente da transição para energias renováveis; e (c) orientar o ecodesign de plantas industriais antes do investimento em ativos fixos. Conclui-se que o Framework TEEC inova ao fornecer uma metodologia robusta de engenharia de sistemas sustentáveis, mitigando riscos de investimento e orientando o desenho de cadeias alimentícias circulares antes do ganho de escala industrial.</summary>
