dc.descriptionA pequena agroindústria de chocolate tem sido uma alternativa encontrada pelos produtores para minimizar os efeitos da crise da cacauicultura com a inserção do produtor de matéria prima em um novo segmento da cadeia produtiva. O processamento industrial ocorre a partir das amêndoas até o produto final. Nesta pesquisa foi realizado um estudo exploratório em 12 agroindústrias localizadas em 10 municípios do estado da Bahia, analisando-se algumas características da agroindústria e do empresário. Utilizou-se a técnica de análise tabular e descritiva. Foi concluído que a pequena agroindústria de chocolate é de iniciativa de produtores de faixa etária e nível de educação elevados, que aproveitam, em sua maioria, a matéria prima da própria fazenda, representando uma importante fonte de geração de renda. The small chocolate agro-industry has been an alternative found by producers to minimize the effects of the cacao crisis with the insertion of the producer of raw material in a new segment of the production chain. Industrial processing takes place from the almonds to the final product. In this research was carried out an exploratory study in 12 agroindustries located in 10 municipalities of Bahia state, analyzing some characteristics of the agroindustry and the entrepreneur. The technique of tabular and descriptive analysis was used. It was concluded that the small chocolate agroindustry is an initiative of older and high level education producers, who takeadvantage, for the most part, the raw material of the farm itself, representing an important source of income generation.
