dc.descriptionNear infrared spectroscopy (NIRS) has been tested as an online technique to predict the quality of raw intact samples of beef. It is well established that the calibration curves are specific to the type and composition of material analyzed, requiring constant calibration to improve the predictive capacity of the models. The objective of this study was to test the calibration curves of VIS-NIRS obtained from scans on the longissimus (LM) muscle between the 5th and 6th ribs to predict shear force on the 5th-6th and 12th-13th ribs. The study used information from 366 bovine carcasses to collect VIS-NIRS spectra after 24 hours of chilling.
