dc.descriptionThe objective of this work was to study the drying kinetics of nectarine (Prunus persica), in natura and osmotically pretreatment in sucrose solutions, with and without shrinkage. The dying process was carried out at temperatures of 40 and 60oC and an air velocity of 2.1m/s. The experimental data were adjusted using Fick's diffusional model in terms of moisture concentration, and the results were analyzed in terms of the correlation coefficient (R2).eng
