Conteúdo:	RESUMO - Foram utilizadas 30 fêmeas adultas da raça Nelore, com no mínimo 5 anos de idade. Os animais foram confinados e divididos em dois tratamentos, sendo: T1. Ganho rápido, recebendo dieta com perspectiva de ganho médio de 1.200g/dia, T2. Dezoito animais de ganho lento recebendo dieta com perspectiva de ganho médio de 600g/dia. Após 24h de resfriamento das carcaças foram feitas as avaliações qualitativas. Dessa forma não houve diferença significativa (P>0,05) para as variáveis (cor, textura, marmoreio e força de cisalhamento) entre as velocidades de ganho. Na avaliação colorimétrica houve diferença significativa entre os tratamentos (P>0,05) para os valores de (a*carne, b*carne e b* gordura. Em conclusão disso, entre as duas velocidades de ganho de peso, não ocorre diferença na maciez da carne, mas em contrapartida a carne de vacas em ganho acelerado apresenta-se maior destaque de vermelho e amarelo, sendo características essenciais na escolha de um produto, visando o mercado consumidor. ABSTRACT - We used 30 females of the breed Nelore, with at least 5 years of age. Animals were confined and divided into two treatments: T1. Gain fast, feed diet with a prospect of average daily gain 1.200g, T2. Slow gain, eighteen animals feed diet with perspective of the average gain daily 600g. After 24 hours of cooling of the carcasses were made the qualitative assessments. Thus there was no significant difference (P> 0.05) for the variables (color, texture, marbling and shear force) between the speeds of gain. In the colorimetric evaluation was significant difference between treatments (P> 0.05) values (a* meat, b*meat, b* fat). To conclude that, between the two speeds of weight gain, there is no difference in tenderness of the meat, but in return the meat of cows in gain accelerated gain presents greater prominence of red and yellow, being key characteristics in choosing a product, according the consumer market.
