Description:	RESUMO - Objetivou-se determinar o valor nutricional do farelo de crambe em comparação ao farelo de soja, tradicional fonte de proteína na nutrição de ruminantes. Os farelos de crambe e soja foram obtidos após extração do óleo contido nos grãos em prensa mecânica do tipo expeller, seguido de extração por solvente orgânico. Os alimentos foram pré-secos em estufa de ventilação e moídos em partículas ≤ a 1mm para realização de análises de composição químico-bromatológica, antinutricionais e ensaios de e perfil de ácidos graxos na fração lipídica. O farelo de soja apresentou composição majoritária de proteínas e baixo teor de FDN. O perfil de ácidos graxos na fração lipídica do farelo de soja e crambe apresentaram alta proporção de ácidos graxos insaturados, sendo maiores concentrações de ácido oléico no farelo de crambe e linoléico no farelo de soja. O farelo de crambe pode constituir uma importante fonte de proteína, juntamente com o farelo de soja na dieta de ruminantes. ABSTRACT - The objective was to determine the nutritional value of crambe meal compared to soybean meal, a traditional source of protein in ruminant nutrition. The crambe meal and soybean were obtained after extracting the oil contained in grain type expeller mechanical press, followed by organic solvent extraction. Foods were dried in an oven pre-vent and ground into particles ≤ 1 mm for analysis of the chemical composition, anti-nutritional and tests and fatty acid profile in the lipid fraction. Soybean meal composition showed a majority of protein and low in NDF. The profile of fatty acids in lipid fraction of soybean and crambe showed high proportion of unsaturated fatty acids, with higher concentrations of oleic acid in crambe meal and linoleic acid in soybean meal. The crambe meal may constitute an important source of protein along with soybean meal in diets for ruminants.
