Description: Resumo: A adição de lipídios na alimentação de cabras leiteiras vem no intuito de verificar a interferência dos óleos vegetal, Licuri e Mamona, em dois níveis, sobre as características sensoriais do leite produzido. Os tratamentos consistiam em um grupo controle sem óleo (SO), óleo de Licuri a 3% (OL-3), óleo de Licuri a 5% (OL-5), óleo de Mamona a 3% (OM-3) e óleo de Mamona a 5% (OM-5), na matéria seca das dietas. Foram utilizadas 10 cabras mestiças Moxotó em lactação, confinadas, distribuídas num quadrado latino duplo (5 x 5), em que cada período foi realizado em 15 dias, sendo 12 dias de adaptação e três dias de coleta. Utilizou-se o Teste de Aceitação para avaliar das características sensoriais conferidas ao leite. A suplementação com óleo de mamona, nos dois níveis, na MS apresentou diferença (P<0,05), tanto no atributo odor quanto no sabor, em relação aos demais tratamentos, podendo estar essa variação ligada à gordura do leite modificada pelo mesmo tratamento. Senso assim revela-se que a adição do óleo de Mamona na dieta de cabras mestiças Moxotó promove alterações na característica sensorial do leite, podendo tornar o produto pouco palatável aos consumidores, se opondo ao efeito do óleo de Licuri. [Acceptability of the goat milk of crossbred Moxoto fed with addition vegetables oils diet]. Abstract: The fat of addition in the feeding of milk goats appears in intention to verify the interference of vegetal oils, Licuri and Castor, in two levels, on the sensorial characteristics of produced milk. The treatments consisted of a group have controlled without oil (SO), Licuri oil 3% (OL-3), Licuri oil 5% (OL-5), Castor oil 3% (OM-3) and Castor oil 5% (OM-5), in the dry matter of the diets. Had been used 10 (ten) crossbred Moxotó in lactation, confined, distributed goats in a double Latin square (5 x 5), where each period was carried through in 15 days, having been 12 days of adaptation and three days of collect. The hedonic test (acceptance test) for verification of the conferred sensorial characteristics to milk was used. The supplementation with Castor oil, in the two levels, in the DM presented difference (P<0,05), as much in the attribute odor how much in the flavor, in relation to the others treatments, being able to be this on variation to the fat of the milk modified for the same treatment. Being thus shows that the Castor oil addition in the diet of crossbred goats Moxotó promotes the alteration in the sensorial characteristic of milk, being able to become the little acceptable product the consumers, opposing it to the Licuri oil effect.
