Description: This work has the objective to isolate and identify fungi, present in breads, which were for sale in the supermarket network in four cities of Ceara (Fortaleza, Itapipoca, Quixada e Sobral). Samples of shaped bread with shell and integral bread, also with shell, were collected, weekly, in the four cities. In the samples, of six different brands, the fungi were isolated in agar-water (AW), after what the microorganisms were identified following their morphological characteristics, using classics taxonomic keys. The breads, of the six different brands, were contaminated for 17 species of fungus. Amongst the identified fungus the only one that could cause some damage to humans were Aspergillusflavus.
