Description:	RESUMO - Objetivou-se avaliar o efeito da adição de níveis crescentes de concentrado na dieta de 24 borregas confinadas sobre algumas características de qualidade da carne de três diferentes cortes cárneos. As dietas consistiram de volumoso a base de feno de Tifton 85 (Cynodon spp.) e concentrado comercial e foram utilizados quatro níveis de concentrado nas dietas (20, 40, 60 e 80%). Os animais foram dispostos em baias individuais, em delineamento inteiramente casualizado, com seis repetições por tratamento. Não houve diferença significativa (P>0,05) dos diferentes níveis de concentrado nas dietas sobre as variáveis estudadas, perda de peso por cocção (39,52%), pH (5,88), L* (43,20), a* (23,24), b* (15,95) e força de cisalhamento (2,39 kgf) nos músculos Triceps brachii (paleta), Longissimus dorsi (lombo) e Semimembranosus (pernil). Concluiu-se que a inclusão crescente de concentrado nas dietas não alterou a qualidade da carne das borregas confinadas e que podem ser usadas amplas proporções de concentrado e obtenção de carnes macias, suculentas, brilhantes e de boa aparência. ABSTRACT - The aim of the study was to evaluate the effect of the addition of increasing dietary concentrate levels of 24 ewe lambs confined on the meat quality of three different meat cuts. The diets consisted of forage based of Tifton hay 85 (Cynodon spp.) and commercial concentrate. It was used four levels of concentrate in the diets (20, 40, 60 and 80%). The animals were placed in individual pens in a completely randomized design with six repetitions per treatment. There was no significant difference (P> 0.05) different levels of concentrate in the diets on weight loss by cooking (39.52%), pH (5.88), L* (43.20), a* (23 24), b* (15.95) and shear force (2.39 kgf) Triceps brachii muscle (palette), longissimus dorsi (loin) and Semimembranosus (leg). It was concluded that the inclusion of concentrate in the diet does not affect meat quality of ewe lambs confined and that can be used ample proportions of concentrate and get the meat tender, juicy, bright and good looking.
