Description: The quality profile of Brazilian wheat varies according to the region where it is produced. The southern region is characterized by the cultivation of soft wheat cultivars, and the south-central and central regions are marked by the production of bread wheat. Although this trend is kept in the quality profile of newly released wheat cultivars, the number of cultivars and the magnitude of gluten strength have increased substantially, regardless of cultivation region.
